Super Easy Guacamole Dip Recipe
You will need avocados, anywhere
between two and ten depending on their size and how many people you are
feeding. Make sure that you have ripe avocados to use for the guacamole, and that you purchase your avocados and tomatoes in time for Cinco de Mayo.
The best way to cut the avocados
is to take a big cutting knife and cut the avocado vertically all the
way around the avocado pit (be careful not to cut yourself!). Once the
avocado is cut all the way around and all the way to the pit, twist the
sides of avocado in different directions to separate. Do not worry if
the pit does not fall out on its own.
Take the side of the avocado
that does not have the pit attached, and using a fork, scoop the meat
out of the avocado skin and into a bowl large enough for the amount of
guacamole dip you are making.
For the side of the avocado with
the pit attached, use the fork to gently scoop the pit away from the
avocado meat, but don't throw away just yet. Set aside the avocado pit
for later. Scoop out the remaining avocado meat into the bowl and
repeat with each avocado.
Once the avocados are all
scooped out of their skins and into the bowl, mash them with your fork
to your desired consistency. Some people prefer the avocados completely
mashed into a paste; others prefer small chunks of avocado within the
paste.
To mix into your avocados, you
can use any of the following, depending on what you have handy, as well
as your taste preferences:
1 small can of Rotel
any kind of salsa
lemon or lime
diced onion
garlic
diced tomato
diced pepper (any kind, sweet, jalapeno, or your favorite pepper)
salt and pepper
whatever sounds good to you!
Now if you are short on fresh
ingredients for the guacamole dip but have either a small can or Rotel
or any salsa, then you are still on your way to a super delicious
guacamole dip. Simply mix a drained can of Rotel or some salsa into the
mashed avocado and season with salt and pepper to taste. Done.
If you do have fresh ingredients
on hand, then a really great guacamole dip usually consists of some
diced tomato, diced onion, garlic, lemon or lime juice, salt and pepper,
and any other seasonings of veggies that sound appealing to you.
Simply mix and serve.
Serve your finished guacamole
dip with tortilla chips, fresh cut veggies, or as a topping for Mexican
food, nachos, burgers, sandwiches, or whatever you like.
Avocados will naturally brown
when exposed to air, so when storing, take one of those avocado pits you
saved and put in the storage container with the guacamole before
putting in the fridge. It will definitely help keep that guacamole dip
from browning.
